– 1/2 cup shredded cooked chicken breast – 1/4 cup barbecue sauce – 1/4 cup diced red onion – 2 medium sweet potatoes, baked – 1 tablespoon butter – 1/2 cup shredded mozzarella cheese – Fresh cilantro, for serving
In a medium bowl, combine the shredded chicken, barbecue sauce, and diced onions until well mixed.
Place the baked potatoes on a foil-lined baking sheet. Slice the baked potatoes down the center and use a fork to mash them slightly. Add 1/2 tablespoon butter to each potato.
